Tinwood Dinner Series No.17 – Caper & Berry
We are excited to be back to having pop up fine dining experiences at Tinwood and who better to start us off than the expert team from Caper & Berry.

Some of you may have already tasted their cooking at establishments such as the Chichester Festival Theatre and The Royal Academy.
For this special Dinner we will pair each course with an amazing range of New Zealand wines hand chosen by ourselves (included in the price).

Amuse Bouche
Crispy chicken skin, smoked cods roe cream and chervil
Potato and Caviar
Smoked potato served with seaweed butter sauce, caviar and sea herbs
Scallop and Cauliflower
Seared Scallop, roasted and pickled cauliflower, wakame powder, burnt onion emulsion, masala oil
Beef Two Ways
Roast sirloin and smoked blade of beef served with pomme puree, sautéed greens, crispy shallots and tarragon sauce
Orange Blossom, Pistachio and Raspberry
Orange blossom curd, pistachio crumb, raspberry gel, dehydrated raspberry, fresh raspberry, tonka bean mascarpone
