Tinwood Dinner series No. 3 – Sam Mahoney
We are thrilled to have Sam Mahoney doing our third dinner here in our intimate tasting room. We’ve been lucky enough to taste Sam’s excellent cooking on more than one occasion both at our sisters wedding venue – Southend Barns and also at Sam’s excellent restaurant – Field and Fork in Chichester.
Sam is a man much in demand and we are very excited that we managed to persuade him to prepare us an amazing 4 course dinner using some of the finest ingredients our local area has to offer!
We will take great pleasure matching this menu with accompanying wines from across the world.
Lobster minestrone, fresh macaroni and Lobster dumplings
Punterella salad, roasted wood pigeon, cob nuts and truffle vinaigrette
Local maple glazed peppered free range pork belly, crispy foie gras, purple potato gnochetti, spiced crackling and cavolo nero
Pistachio olive cake, pistachio curd, blood orange and vanilla mascarpone sorbet
